How to Make a Chocolate Mousse Cake

Prepare a double boiler, making sure the water does not
touch the bottom of the top portion, and maintain at a
simmer. Place the chocolate in the top portion of the
double boiler and stir occasionally until melted and
smooth. Remove the chocolate from the heat and set
aside for several minutes to cool slightly. Whisk in the
egg yolks and set aside to cool to room temperature.
